Several weeks ago, I wanted to make fish for dinner but I needed a new idea and didn’t want to head out to the grocery store. I looked in my pantry and saw pistachios and thought…that could work. I was amazingly surprised at how great it was. Pistachios are a great source of protein, fat, vitamin b-6, magnesium, and iron to name a few. I used wild cod but I am sure many others would work too.
Pistachio Crusted Fish
- 1 cup pistachios shelled
- dash of salt (if your pistachios are salted, don't add any)
- dash of pepper
- 1 egg
- 1 lb wild fish
- Place the pistachios, salt and pepper in the food processor. You just need a couple pulses to get a great texture for the crust. Transfer the pistachio mixture to a bowl. Beat one egg in a different bowl. Dip the fish in the egg and then the pistachio mixture and place on a baking sheet. Bake at 375 degrees for about 10 to 15 minutes, depending on the thickness of the fish.
