A Healthier option for potato salad.
Potato Salad – No Mayo
- 1 1/2 cups of Greek yogurt
- 2 cucumbers seeded and diced
- 2 tablespoons of fresh dill chopped–keep 1 for later
- 1/2 lemon-juiced
- 1/2 teaspoon garlic powder- could use fresh garlic (I didn't have any)
- 1-2 lbs of red potatoes
- 2 tablespoons green onions -chopped
- Salt & Pepper to taste
- Take the Greek yogurt, cucumbers, 1 tablespoon fresh dill, lemon juice, garlic powder and mixed in a food processor or blender. Pulse a couple times to mix
- Pour in bowl and refrigerate for at least an hour.
- Clean and cube red potatoes.
- Bring salted water to a boil. Add potatoes for about 7 to 10 mins. Watch closely, you want the potatoes to be a little firm.
- Drain potatoes and let them cool.
- Mix cucumber/yogurt dressing with potatoes.
- Stir in green onions and extra dill (I love dill so I add a lot, if you aren’t as big of fan, you can leave this step out).
- Season with salt & pepper. Refrigerate and then enjoy!
