If you have been to the farmer’s market or have your own garden, you probably are seeing a lot of zucchini. Enjoy a simple zucchini bread recipe with no refined sugar.
Simple Zucchini Bread
- 3 cups of flour (we use sprouted spelt or einkorn)
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon ginger
- 2 eggs
- 1 cup honey
- ½ cup melted butter
- 3 1/2 cups shredded zucchini
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- In one bowl mix the flour, baking soda, dry spices.
- In the second bowl, beat the eggs and then add the honey, vanilla, salt, and butter. Mix. Add the zucchini.
- Combine the wet ingredients to the dry ingredients and mix.
- This recipe makes 2 loaves. Place batter in two greased loaf pans. Bake at 350 degrees for about 45 minutes.
- Insert a toothpick into the middle of the loaf; if it comes out clean, your zucchini bread is done.
- Let cool in the pan for several minutes. Then, remove the loaves from the baking pans and cool on a cooling rack.
