Quick Easy Pumpkin Spice Pancakes

Pumpkin Spices PancakesWho loves pumpkin? We do! We do!

Last week I spoke in my son’s classroom about eating fruits and vegetables. The kids were amazing and were able to call out the names of so many fruits and vegetables. When I pulled out a pumpkin, many of them said how much they love pumpkin pie. I decided it would be great to share other ways to enjoy pumpkin besides pie.

These pumpkin spice pancakes are filled with nutmeg, cinnamon and vanilla. While they cook, the aromas fill your kitchen. Enjoy with your favorite pure maple syrup or just a dash of cinnamon.

Quick Easy Pumpkin Spice Pancakes

  • 1 ¼ cup of flour (we used Jovial)
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup milk (we used almond milk)
  • 1 egg
  • 1/2 cup pumpkin puree
  • 1 tablespoon coconut oil melted (plus a little extra for cooking)
  1. Add the flour, baking soda, salt, cinnamon and nutmeg to a bowl and mix
  2. Add milk, egg, oil to the same bowl and mix
  3. Add the pumpkin puree and mix
  4. Add additional coconut oil to a skillet using medium heat
  5. When hot, add pancake batter to skillet. Flip when the pancake begins to bubble in the middle.
  6. Serve and enjoy with cinnamon and/or your favorite pure maple syrup.

Consuming pumpkin can have many benefits:

  1. Pumpkin is a great source of beta carotene, which is an antioxidant that can help with cancer prevention.
  2. When you consume pumpkin you are getting vitamin A, which can help with eye sight and your skin.
  3. Pumpkin is also a great source of fiber. This will keep you fuller longer and can even help with weight loss.
  4. Eating pumpkin also is a great source of vitamin C, which can help with your immune system.
  5. Adding pumpkin to your diet will add a great source of potassium. This nutrient helps with muscle strength, nerve function and heart health.

So next time you are debating adding some pumpkin to your favorite recipe, go for it!
