My son was begging for muffins on Sunday so I was hoping I would be able to use what was in our pantry & fridge. I had blueberries and bananas….so that is what we used so I wanted to share.
Grain Free Blueberry Banana Muffins
- 2 cups almond flour
- 1 tbsp coconut flour
- 2 bananas
- 3 eggs
- 1/4 cup coconut crystals
- 1 tsp cinnamon
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla
- 1/2 cup blueberries
- Mix the almond flour, coconut flour, coconut crystals, cinnamon, baking soda and salt in a large bowl.
- Mash the bananas in a medium bowl, then add the eggs and vanilla and whisk together.
- Add the banana mixture to the dry ingredients and mix.
- Fold in the blueberries.
- Line muffin pan with baking cups or grease with butter.
- Bake at 375 degrees for approximately 12 to 15 mins.
This recipe makes approximately 12 Grain Free Blueberry Banana Muffins muffins.
