Grain-free banana applesauce muffins are kid-friendly and also a favorite with adults.
Grain-Free Banana Applesauce Muffins
- 2 cups <a href="http://amzn.to/1EeIkYM" target="_blank">almond flour</a>
- 3 tbsp <a href="http://amzn.to/1NxqdAb" target="_blank">coconut flour</a>
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 ripe bananas (mashed)
- 1 egg
- 1 cup unsweetened applesauce
- 1/2 cup <a href="http://amzn.to/1hDarXP" target="_blank">coconut sugar</a>
- 1/4 cup <a href="http://amzn.to/1PNvCl3" target="_blank">coconut oil</a>
- Preheat oven to 400 degrees.
- In one mixing bowl, mix the bananas, egg, applesauce, sugar and oil in one bowl.
- In the 2nd bowl mix the flour, baking powder, baking soda and salt.
- Combine the dry ingredients with the wet ingredients.
- Mix and add to a muffin pan.
- Bake at 400 degrees for 15 to 20 mins.
- This recipe will make 12 muffins.
