One of THE BEST Changes I Made to My Diet

Veggies for Breakfast!

People always ask me what I avoid or cut out when it comes to my diet but I am never asked what I do more off….and that is EAT MORE VEGETABLES. Do you ever think about how often do you eat vegetables?

Many guidelines out there lump fruits and vegetables together. “Eat your fruits and vegetables.” Do you eat more fruit throughout the day and think it is okay to skimp on your vegetables.
We started years ago to eat vegetables at every meal. Yep, EVERY SINGLE MEAL! And this includes breakfast, which is a time people rarely think of vegetables. We certainly weren’t focused on them.

When you start you day with vegetables, you not only give your body a jump start but you set the tone for the rest of the day.
So my challenge to you is to start adding vegetables to your plate at breakfast. If you look down at your plate and don’t see one….grab a veggie and enjoy!
Some of our favorite ways to enjoy vegetables at breakfast-

  • Egg bake- add any type vegetables you would like with eggs and you have the most delicious breakfast. And remember greens will wilt down, so add a bunch!
  • A sweet potato hash – This is one of our favorites.
  • A salad- this is our daughter’s favorite. Mix your favorite greens and vegetables for a crisp delicious salad in the morning. It doesn’t have to be a typical breakfast.
  • Leftovers from dinner last night- If you had some great vegetables from dinner last night, enjoy them in the morning again.

Going out to eat…no problem!

Most restaurants offer a veggie omelet /hash/scramble and some restaurants even offer a green salad instead of potatoes. If you are like our family, check out the menu before you go out to eat and support restaurants with great vegetable options.

So get up and start your day with a pile of vegetables!
